I don't see one yet so just making a list of fish and lands so we don't have to go digging for the info every time we need it.
Why Fish?
Fishing is an active method of earning gold whereas farming and pets are passive and take time. This makes fishing currently the easiest/fastest way to make gold if you want active play. You're limited only by the amount of ponds you can find per hour, and its pretty profitable! To make the Stick Rod (currently the only rod we can make.) it costs 240g in materials. Your Stick Rod has 30 charges on it. Assuming you don't break your lines that's 30 fish lets assume you catch only the smallest possible fish. Its a 4in Molly - This is impossible I've only caught a 4in twice, most fish you catch will be in the middle size range. But lets assume you do the impossible and catch 30, 4in mollys and sellbox them. Your 30 mollys would be worth 360g. Since the creation of the rod is 240g, its impossible not to run a profit, so fishing is always good!
The opposite end of impossible (the current largest fish is a 34in Koi) if you got 30 of the largest fish and sold them it would be 10,200g. So your profit per rod will be between 120-9,960g per rod. I usually make around 4-5k per rod.
To apply this to AFK Fishing; each bait (worm) is 5g. I'm getting an average of about 1 fish per 10 or so attempts. Which means about 50g per fish. Black Mollys are a wash in this setup. But all other fish give you profit, so if you're not planning on doing anything (In other words if you're going to be AFK) its still worth it though not as profitable as Rod Fishing. Plus AFK fishing has some of its own unique catches so its worth giving it a try.
How to fish?
Manual Fishing
First you need to equip a Fishing Rod. Then get close to a pond and you'll see a yellow square appear in the water. Click/tap it or hit spacebar. This pulls up 2 bars. The right bar is your progress, the left bar is your play area. You have to wait to hook a fish, in the Progress bar look for a green fish to appear along the bottom. When you see the green fish, click/tap or hit spacebar, This will hook the fish. Now ignore the Green fish and look to the play bar. In your play area you'll see a red fish, and a yellow bubble. You are the yellow bubble, the bubble will constantly move up the bar automatically. Your goal is to keep your Yellow bubble on the red fish. You need to hold down your click/tap/spacebar to move the bubble down, or let go to allow the bubble to move up. Whenever the red fish is within the yellow bubble your reeling in, and when the red fish is not in the bubble the fish is getting away. This can be seen in the progress bar if the green fish is going up or down. When the red fish is in the yellow bubble and you're reeling, in the green fish goes up the progress bar. When the green fish is past the top of the bar, you catch the fish!
Neither the red nor green fish represent the fish you will catch. You don't know what fish you got until you catch it.
AFK Fishing
This method is much easier then Manual Fishing. Equip some bait, then get close to a pond until you see the yellow square in the water. Click/Tap/or hit Spacebar you'll sit and begin to fish. Now let it do its thing. You do need to keep that tab open to continue fishing, but if you open a new window, you can browse whatever you like as it fishes for you. Personally if I'm going to play a game I open a window in the background and let it fish. It will attempt to fish every 10 seconds or so, every attempt will not succeed. From my experience I would guess its 1 in 10 or so that will land a fish.

Rarity and size is based on my experience, if you find a size outside of what I have listed please post it! I did round to the nearest solid number I had though because I don't think we get credit for fractions of gold, the fraction sizes seem to be for contests. Rarity seems to be connected to their maximum size but I have no solid confirmation of this. Right now there aren't too many fish, but I'll have to change this layout when there are more. Right now there is only one location, but if you look at your collections there is a Saltwater Fish collection suggesting there will be more types of location in the future. If that never happens and the salt water fish just start appearing in the ponds I'll remove the location details. Price is Per Inch not fish, so if you turn in a 4 inch Black Molly you get 12g from sellbox not 3g.

- Contests
Usually during the seasonal festivals when you can upgrade your farm pets, there's a fishing round. The Fishing contest is to catch the biggest fish possible. This doesn't have to be done within the time frame so its a good idea to save your biggest fish in your inventory or bank and turn it in when the contest comes around. Every time its come around so far, the prize has been a Material Pack. So long as that doesn't change here's whats in the pack.
